Caprese Stuffed Avocados

Ingredients

  • 2 ripe avocados, halved and pitted
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella pearls
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic glaze
  • Salt and pepper, to taste
Instructions

In a medium bowl, combine the cherry tomatoes, mozzarella pearls, basil, olive oil, salt, and pepper. Spoon the mixture evenly into the avocado halves, filling the center where the pits were removed. Drizzle with balsamic glaze just before serving. Enjoy immediately as a light lunch, appetizer, or refreshing summer side dish.
